Nicole's Team - Zucchini Turkey Sliders
When Ian came up with the idea of a Super Bowl Snack challenge idea, I was like no way. I am a huge Patriots fan and there was no way I'd have time to stay up to date with scouting reports, media interviews and twitter wars, let alone figure out if NSYNC was going to be there with Justin, if I took on this challenge. Then Gronk got cleared, and the clouds parted and I figured why not, especially since the Eagles have no chance now. #IHEARTGRONK
One of things I love is finding new ways, or rather healthier ways, to enjoy everyday favorites, I mean who wants to give up their favorites, right? So this challenge was right up my ally. I've tried different nacho ideas in the past, so something new was definitely needed. Since no Super Bowl is complete without sliders, I decided to find inspiration there.
After a lot of trial and error, I found the winning combination. It's flavorful, hearty and it tastes AMAZING! Don't take my word for it though. You have to try this!

1 lb ground turkey
½ yellow zucchini, grated and squeezed of excess moisture (squeezing the extra moisture is key)
1 scallion, thinly sliced
1 egg yolk (you need the fat to hold it together, it's not a lot, so don't skip it)
1 tbsp fresh parsley, chopped
1 tsp paprika
1 tsp salt
1 tbsp store bought Tzatziki sauce - Shopping at Stop & Shop in Ridgefield, this is found in the hummus isle.
other toppings of your choice
Mix the first 7 ingredients together. Shape into slider patties and arrange on a plate.
Preheat a grill (i prefer cooking turkey burgers stove top), cook burgers on both sides until cooked through.
Serve on a bed of spinach (or you can put it on a bun) with Tzatziki and other toppings of your choice.
